
If you're looking for a high protein, lower carb version of your favorite chicken parmesan recipe, look no further. This almond flour chicken parm is really good and I try to make it at least once a month. It's cheesey and you get a little more protein, fat and fiber from the almond flour compared to all-purpose flour.

Ingredients:
8 oz mozarella cheese
1/2 cup almond flour
2 pounds chicken breast (3 oz per person)
1/2 cup Parmesan Cheese
2 cups Marinara sauce
2 eggs
fresh basil and parsley to top
Directions:
1. slice your chicken breast in half
2. crack 2 eggs in a bowl and give it a quick scramble
3. add 1/2 cup of almond flour and 1/2 cup parmesan cheese to another bowl and add any seasoning you like
4. dip the chicken into the egg mixture
5. then dip it into the almond flour/parmesan cheese and place on a baking tray with a little oil to prevent the chicken from sticking
6. repeat that process and then top with marinara sauce and cheese
7. bake at 350 for 30 minutes
