Ingredients: (Crust)12 cookies of choice 1/4 cup melted butter
FillingPart One:150 grams blueberries2 tbsp sugar + juice of 1/2 lemon (heat in a sauce pan on the stove for about 5 minutes)Part Two:1 block cream cheese2 tbsp sugar1 egg2 tbsp heavy cream or plain yogurtDirections:1. combine cookies and melted butter in a food processor or crush cookies in a ziploc bag using a rolling pin and add to a bowl to combine with melted butter2. add crust to a greased spring form pan3. add part one and part two of the filling into the food processor or blender4. pour over the crust5. on a baking sheet, pour 2 cups of water before adding your spring form pan6. place spring form pan onto the water-filled baking sheet7. bake at 325 for 40 minutes8.let cool and then place in the fridge to firm up for a few hours
