Ingredients:
12 Eggs
3 Roma Tomatoes
6 Mini Sweet Peppers
1 Package of Spinach (If frozen, make sure to de-thaw)
3 Basil Leaves
1/2 cup Onion
1/4 cup Feta Cheese and 1/4 cup Cheddar
3 Bacon Strips
3 tbsp Olive Oil
3 tsp Parsley, Garlic Powder, Onion Powder
Directions:
1. Chop onion, tomatoes, peppers, basil, and bacon
2. Defrost spinach (make sure to drain ALL excess water from the frozen spinach or else mixture may become soggy)
3. Add the onion to the pan with 1-2 tbsp of butter on medium/low heat and cook until very soft
4. Add tomatoes and bell peppers then add 1 more tbsp of butter and olive oil
5. Add bacon to the pan along with seasoning and sesame oil and 1-2 more tbsp of olive oil
6. Add feta cheese and colby jack cheese to the mixture and continue to cook (total time for everything to cook until soft is about 20-30 minutes)
7. When everything is cooked, add chopped basil leaves and remove pan from the heat (photo below shows what the mixture should look like at this point)

8. In a separate bowl, crack eggs and whisk together
9. Add spinach mixture into the bowl with whisked eggs
10. Add olive oil to a circular pan and pour egg mixture in, top with feta cheese and bake at 375 for 30 minutes
