Teriyaki Cauliflower Fried "Rice"

Ingredients:

1. 1 bag cauliflower rice (can be frozen)

2. 1 bag of frozen peas (can swap canned or string beans)

3. 1/2 cup chopped carrots

4. 1 onion and 3 cloves garlic

5. 1 package of chicken breast (optional)

6. 1/2 cup Soy Sauce

7. 2 tsp salt and pepper

8. 3 tbsp olive oil

9. 2 tbsp sesame oil (optional but intensifies the flavor)

10. 1 cup mushrooms

Directions

1. Cut onion and garlic

2. sautee onion and garlic in olive oil then add mushrooms

3. Add chopped cauliflower, peas, carrots along with 1 tsp salt and pepper and 1 tbsp olive and sesame oil

4. Cut chicken breast into strips (omit step 4-6 if you are making it without chicken)

5. In a separate pan, add olive oil to sautee chicken breast

6. When chicken breast strips are done cooking (reaching an internal temperature of 165 degrees F) remove from the pan and add to the pan with cauliflower mixture

7. Cook all vegetables together and add soy sauce and the rest of your salt and pepper
