Trail Mix Energy Bites

I was surprised how well these turned out to be quite honest with you. If you look at the ingredients and see "dried plums" I guarantee you might be thinking "yuck" but the natural sweetness from the dried fruit gives these a great flavor (along with the peanut butter and dark chocolate of course.) This is a great afternoon snack or bite to pop in your mouth before a workout since each is not too calorically dense and packs in healthy carbohydrates, fat and a bit of protein. I'm not about to brew a whole pot of coffee to make these so I recommend making them with leftover coffee or if you have an espresso machine, pull a shot of espresso and that's quick and easy. I'm working on a cold brew smoothie recipe which requires cold brew coffee cubes so using some of that coffee before you freeze it to make these bites is a great way to prep both.

Ingredients:
1 cup oats
40g dark chocolate almonds
1/2 cup crunchy peanut butter
1/4 cup sunflower kernels
68g raisins
7 dried plums
2 tbsp coffee
1/2 tsp vanilla and 1/4 tsp salt
Directions:
1. blend the oats in a high speed blender along with the dark chocolate almonds, sunflower kernels and raisins
2. boil a pot of hot water and let the prunes soak for 5 minutes or so until soft
3. add the prunes and 2 tbsp coffee along with vanilla and salt
4. form them into a ball, top with a sprinkle of rolled oats and keep them in the fridge for a snack!
