I feel like pasta salad is so versatile. I'll be honest, I'm not a huge fan of pasta salads but they do go well with a source of protein thrown in there for a quick and easy meal. You can prep this ahead of time and it will taste just as good. Remember with pasta, 2 oz is a portion size (uncooked) and ~200g cooked. Adjust to your personal portion size but I figured this would be helpful to know!

Ingredients:
1 box Tricolor Pasta
1 Green or Yellow Bell Pepper
1 can of medium sized Black Olives
1 small container of crumbled Feta Cheese
1 cup of Cherry Tomatoes
4 oz Sundried Tomatoes
1/2 cup Light Italian Dressing
Directions:
1. Boil Tricolor Pasta
2. Dice desired amount of Green or Yellow Bell Pepper
3. Add Olives
4. Add Cherry and Sundried Tomatoes (cut in half lengthwise)
